Awesome Apple Bread!

With all the sales on apples these days, this is an excellent recipe to help you put them to good use! It freezes really well - I wrap mine in plastic wrap and then store them in freezer ziploc bags. Have it with breakfast or for a quick snack!
This recipe makes 2 loaves.
Apple Bread
1/2 c. oil
1/2 c. applesauce
3 eggs
1 1/2 c. sugar
1 tsp. vanilla
3 c. diced apples
3 c. flour
1 tsp. cinnamon
1 tsp. baking soda
1 tsp. salt
1 c. chopped nuts (optional)
Combine and set aside oil, applesauce, eggs, sugar and vanilla. Sift together flour, cinnamon, soda and salt. Add dry ingredients to wet ingredients gradually. Add apples and nuts. Bake in 2 greased bread pans for 70 minutes at 325 degrees. Important: After 60 minutes, sprinkle sugar on top of the loaves and let bake the remaining 10 minutes. Cool 10 minutes in pan.
